Ingredients:
* 2 medium potatoes
* 1 1/2 cups cauliflower and green bean
* 1 teaspoon cumin seeds (jeera)
* 1/4 TSP asafoetida (Hing)
* 1 1/2 tsp chilli ginger-green paste
* Ali fenugreek (qasuri) 1 cup finely chopped
* 2 teaspoons Garam PANI
* 1 tbsp oil
* Salt to taste
Other ingredients:
* Oil deep-frying

Method
* Cut the thick potato wedges (lengthwise) with the skin on.
* Deep fry the potatoes and cauliflower separately until they are golden brown. Drain on absorbent paper and keep aside.
* Teflon pan heat oil; Add the cumin seeds and asafoetida.
* When seeds crackle, add green chili puree-ginger saut for 1 minute.
* Add the fenugreek leaves crispy browned leaves and saut until lightly.
* Add the potato chunks, fried cauliflower, PANI Garam Masala and salt and mix well.
* Serve hot.

Tips
An easy way to make a simple version of PANI Garam Masala at home is to mix equal parts of salt and jeera powder, roasted black amchur.
